Hard chicken (often called a stewing hen, boiling fowl, or hard-body chicken) refers to mature, older chickens—typically egg-laying hens that are 10 months to over a year old. Unlike soft “broiler” chickens, their meat is denser, leaner, and requires longer cooking, but delivers a much richer, deeper, and more savory flavor.
