Ijebu Garri is a fine-textured, distinctly sour variation of cassava flakes produced by the Yoruba people in the Ijebu region of Nigeria. Its longer fermentation process gives it a sharp, crisp, and slightly tangy flavor. It is highly prized across Nigeria and the diaspora for “drinking” with cold water, sugar, and groundnuts, or for making fluffy eba.
